How To Make Rasta Pasta : ( Instructions )
Here's a simple recipe to make rasta pasta at home :

Ingredients:

‌8 ounces penne pasta (or any pasta of your choice)


‌2 tablespoons vegetable oil


‌1 onion, thinly sliced


‌1 bell pepper (any color), thinly sliced


‌1 small carrot, julienned


‌2 cloves garlic, minced


‌1 teaspoon dried thyme


‌1 teaspoon paprika


‌1 teaspoon curry powder


‌1 cup coconut milk


‌1/2 cup heavy cream


‌1 tablespoon tomato paste


‌1 scotch bonnet pepper (optional, for heat)


‌Salt and pepper to taste


‌Fresh parsley or cilantro for garnish

Instructions:

‌Cook the pasta according to the package instructions until al dente. Drain and set aside.


‌In a large skillet or pan, heat the vegetable oil over medium heat. Add the sliced onion, bell pepper, and carrot. Sauté for about 5 minutes until the vegetables start to soften.


‌Add the minced garlic, dried thyme, paprika, and curry powder to the skillet. Stir well to coat the vegetables in the spices and cook for another minute until fragrant.


‌Reduce the heat to low and pour in the coconut milk, heavy cream, and tomato paste. Stir until the tomato paste is well incorporated into the sauce. If you like spicy food, you can add a whole scotch bonnet pepper to the sauce (pierce it with a knife a few times to release its heat). Otherwise, you can omit it.

Creamy rasta pasta


‌Simmer the sauce for about 11-15 minutes, stirring occasionally, until it thickens slightly and the flavors meld together. Remove the scotch bonnet pepper if used.


‌Season the sauce with salt and pepper to taste. Remember to be cautious with the salt if your tomato paste or coconut milk is already salted.


‌Add the cooked pasta to the skillet and toss it in the sauce until it is evenly coated. Cook for an additional 2-3 minutes until everything is heated through.


‌Serve the rasta pasta hot, garnished with fresh parsley or cilantro. You can also add additional toppings like grated Parmesan cheese or a squeeze of lime juice, if desired.
